What's for Dinner...?



The inevitable question. With both of us coaching, we are usually coming home right at dinner time contemplating what we are going to do for dinner...but not this week. We have had fun making dinner and coming up with 2nd day dinner ideas using leftovers. Above is a picture of Sweet Potato Dumplings (on left) and Poppyseed Chicken (on right), join them with some green vegetables and you have a wonderful meal. My mother-in-law shared these recipes with us and we just loved them!

Poppyseed Chicken

4-6 cooked chicken breast
2 cans cream of chicken soup
8oz. carton of sour cream
2 sleeves of crushed Ritz Crackers
1 1/2 TBSP poppy seed
1/2 stick of butter

Cut chicken into pieces layer in the bottom of 9X13 butter dish.
Mix soup and sour cream together and spread over chicken.
Crush Ritz Crackers and add poppy seeds. Then spread over soup mixture.
Pour melted butter over the crackers .
Bake @ 350 until bubblely and golden brown.

Sweet Potato Dumplings

1 pkg frozen Sweet Potato Patties (Cut each patty into 1/2 moons)
* these can be found in the frozen section at Publix; ask if you don’t see them!
2 large or 4 small packs of Crescent Rolls (16 total crescent rolls)
Roll each potato half in crescent roll and place in baking dish. (I used 9x13)

MIX:
2 Cups water
1 1/2 Cups sugar
1 sticks margarine
1 Tablespoon cornstarch

Heat the above in saucepan until margarine and sugar dissolves. Then add 1 Tablespoon vanilla. Pour over dumplings and bake at 350 for 40-45 minutes or until crescent rolls are golden brown. Remove from oven, sprinkle lightly with cinnamon-sugar when done.
Makes 16.
